Salted Peanut Rolls

Ingredients

  • 1 jar (7 ounces) marshmallow creme
  • 2 to 2-1/4 cups confectioners' sugar, divided
  • 1 package (14 ounces) caramels
  • 2 tablespoons water
  • 4 cups salted peanuts, chopped
  • 2 cups milk chocolate chips
  • 2 teaspoons shortening
  • Directions

    1. Line two 15x10x1-in. pans with waxed paper.
    2. In a large bowl, beat marshmallow creme and 1 cup confectioners' sugar until blended.
    3. Knead in enough remaining confectioners' sugar until mixture is smooth and easy to handle.
    4. Divide mixture into 4 portions. Roll each portion into a 1/2-in.-thick log. Cut each crosswise into 1-1/2-in. pieces; place all on 1 prepared pan.
    5. Freeze until firm, about 15 minutes.
    6. Meanwhile, heat caramels and water over low heat until melted, stirring occasionally.
    7. Working with one-fourth of the pieces at a time, dip in melted caramel; roll in peanuts.
    8. Place on remaining prepared pan.
    9. Repeat with remaining pieces; freeze coated pieces until set.
    10. In top of a double boiler or a metal bowl over barely simmering water, melt chocolate chips and shortening; stir until smooth.
    11. Dip bottom of rolls into melted chocolate; allow excess to drip off.
    12. Return to prepared pans.
    13. Refrigerate until set.

    Notes

  • Store between layers of waxed paper in an airtight container at room temperature.
